How to Prepare Thai Oolong Tea:
- 4 grams of tea per 8oz (240 ml) of fresh water
- Bring fresh water to 195 degrees F
- Steep tea for 4 minutes in a filter that allows the leaves to expand fully
- Good for 3 or 4 infusions. With each infusion, the flavor profile will change, and you may taste different notes
- Finger sandwiches

- Pasta
- Spicy curry dishes
- Medium-High – An 8-ounce (230-ml) cup of white tea generally contains between 50 and 75 mg of caffeine

Our Thai oolong is procured from a small tea garden of only 110 acres located in the foothills of the rich forest of Banchang, Mae Tang district of Chiang Mai, Thailand. With limited production, this producer is globally known for specializing in producing high-quality organic tea.

I tried their lapsang souchong and loved it! It was smooth and absolutely not bitter. They give you refrigerator magnet with instructions on the water temperature ideal for each type of tea so you never over heat your water. I also love their practice of sustainable sourcing and packaging.

I happened to be passing by the Symphony of Leaves pop-up shop in downtown Atlanta today on my birthday, when Renee invited me in for a cup of tea. I’m not a big tea drinker, but as today is my birthday, I decided to go in to the kind request. I had maybe the most delicious cup of tea I’ve ever had. It was naturally sweet and not bitter.
