Picked during the monsoon season in Sandakphu, Nepal, Himalayan Golden Black Tea has an intricate flavor profile with top notes of malt, honey, and smoked sugar, and secondary notes of apricot and clove. It has a velvety finish. After a short summer season in Nepal, the Himalayan monsoon approaches the foothills with a magnanimous rush. The golden-red soil of Sandakphu drinks in this moisture, producing a rare artisan tea that reflects all of nature’s goodness. After plucking, the leaves are 25 percent withered and then rolled in mechanical rollers. The tea is then placed in a shaping machine and further dried, producing uniformly curled leaves resulting in beautiful Himalayan Golden Tea. Its velvety finish allows for it to be consumed alone or with sweeteners and cream.

Description

How to Prepare Himalayan Black Tea:

  • 4 grams of tea per 8oz (240 ml) of fresh water
  • Bring fresh water to 200 degreesF
  • Steep tea for 4 minutes in a strainer that allows the leaves to fully expand
  • Good for 3 or 4 infusions. With each infusion, the flavor profile will change, and you may taste different notes

I tried their lapsang souchong and loved it! It was smooth and absolutely not bitter. They give you refrigerator magnet with instructions on the water temperature ideal for each type of tea so you never over heat your water. I also love their practice of sustainable sourcing and packaging.

I happened to be passing by the Symphony of Leaves pop-up shop in downtown Atlanta today on my birthday, when Renee invited me in for a cup of tea.
