Pu’erh Tea Pu-erh (also spelled “pu’er” or “puer”) is a type of fermented tea produced in Yunnan province, China. Pu-erh has a rich cultural heritage, often associated with traditional Chinese medicine and ceremonial tea drinking. Its production is a meticulous process, sometimes regarded as an art form, and aged pu-erh is often highly valued by collectors and connoisseurs. In addition to being known for its unique production process and potential health benefits, Pu-erh actually hails from trees, versus bushes. This particular Pu-erh tea, Jing Mai Gu Shu, which means ancient tree, was processed and formed as a brick, in 2014 in the Jingmai Mountains of Yunnan Province by an ethnic Dai family using natural farming methods.  Pu-erh, by nature, is very earthy. This particular Pu-erh has hints of hazelnut and eucalyptus, which offers a nice balance to its natural earthiness. Pu-erh Teas pairs well with savory foods

Description

How to Prepare Pu’erh:

  • 4 grams of tea per 8oz (240 ml) of fresh water
  • Bring fresh water to 200 degreesF
  • Steep tea for 4 minutes in a strainer that allows the leaves to fully expand
  • Good for 3 or 4 infusions. With each infusion, the flavor profile will change, and you may taste different notes

I tried their lapsang souchong and loved it! It was smooth and absolutely not bitter. They give you refrigerator magnet with instructions on the water temperature ideal for each type of tea so you never over heat your water. I also love their practice of sustainable sourcing and packaging.

I happened to be passing by the Symphony of Leaves pop-up shop in downtown Atlanta today on my birthday, when Renee invited me in for a cup of tea. I’m not a big tea drinker, but as today is my birthday, I decided to go in to the kind request. I had maybe the most delicious cup of tea I’ve ever had. It was naturally sweet and not bitter.
