How to Prepare Yue Guang Bai Tea:

  • 4 grams of tea for 8oz (240 ml) of fresh water
  • Bring fresh water to 170-175 degrees F
  • Steep for 4 minutes
  • Good for 2 – 3 infusions. With each infusion, the flavor profile changes, and you are likely to experience secondary and tertiary flavor notes

Pairing Recommendations

  • Bitter vegetables – broccoli, arugula, Brussels sprouts
  • Dark Chocolate, Caramel
  • Spices – cardamom, nutmeg, cinnamon
  • Poundcake and Red Velvet Cake

Caffeine Level 

  • Low – An 8-ounce (230-ml) cup of white tea generally contains between 5 and 40 mg of caffeine

I tried their lapsang souchong and loved it! It was smooth and absolutely not bitter. They give you refrigerator magnet with instructions on the water temperature ideal for each type of tea so you never over heat your water. I also love their practice of sustainable sourcing and packaging.

I happened to be passing by the Symphony of Leaves pop-up shop in downtown Atlanta today on my birthday, when Renee invited me in for a cup of tea.
